Offering 100 whole butts -- hot -- is a difficult chore. Plus, what does the customer do... they do not necessarily know how to break that thing down and sauce it. Yes, they have options for how to finish and serve it, but handling a whole butt is a chore.
A better plan, IMHO, is to break them down into half pans with lids, pulled with some vinegar sauce, and refrigerated. You can pack those cold pans into a few coolers. For the customer, go home and oven heat it for an hour and done. You can obviously have a certain amount hot butts at the fundraiser, for tasting or whatnot. But cold is easier to prep, easier to sell, easier for the customer. Good luck with you event.
