165 is just the start of the plateau that can take 2-3 hours to break thru. Finish temp is like was said already, 195ish. You won't go past 165 if you wrap and into an ice chest, it will only hold at 165 for a short period of time. If you want to wrap at 165, put it back in the smoker til 195 and THEN into a cooler!
