Thx. see my reply to Peter. The 165 just came off the top of my head so I would have checked it. Only to 151 after 6.5 hours so I can expect that even when it get to 165 that I am looking at a good bit of time to get to 195 so it may be a 10 -12 hour smoke at 230.
No telling how long the brisket is going to take, 20 hours?
