Here is what I do...rub and inject the bird with your preferred mixes and place on top rack of WSM. Open all vents wide open. Load the ring of charcoal half full. Light a full chimney of coals. Once the lit coals are ready pour across the top of the unlit coals. Add a few baseball size chunks of fruit wood. Set the upper chamber on top and cook until the internal temp of the thighs reaches 165.
