I have done a turkey for Thanksgiving on my 22.5" WSM for the last several years. I inject with Cajun Injector Creole Butter and then rub with The Slabs Stephy Style rub. I rub the breast under the skin as well. I soak a cheesecloth with the Creole butter and cover the turkey. I baste the cheesecloth 2 or 3 times throughout the cook. I usually cook it the day before and slice it. Then in the oven with some chicken broth at about 250 to reheat on Thanksgiving day. I use pecan and cherry wood and cook at about 275.
