Do one for practice in the next couple of weeks. You may want to wrap in cheesecloth soaked in vinegar for the first 2 hours to avoid too much color. Put a couple of quartered apples and onions in the cavity to keep it moist. Cook hotter 275 to 325. Pull at 160 in the thigh. Buy a v rack so it can sit breast down. Season inside as well as out. Don't over season with BBQ rub unless you are serving with sauce. Sage is always good to add inside.
