Whole Hog Cooking time

I have a whole hog that's been skinned (62 LB) and I'm having a difficult time getting the temperature up to 225...i'm hovering at 210. Any tips on getting the temperature up? I got the vents open for max air flow...it is a cool 46 degrees outside. Will the hog get done cooking at 210'ish?
