My fav thing is a rack of custom cut beef back ribs, with lots of meat. L&S, they can take me about 4 hrs, maybe more, on a 250 or so smoker.
But I got the other end of those ribs yesterday -- the racks of baseball bat ribs. The meat is not very thick on the bone... might this take less time? 3 hrs? If I go long enough to get them tender, afraid there wont be anything left. Any ideas? Thanks.
