I don't use a water pan in either of my WSMs, I have both an 18" and 22". I don't use sand, dirt or any other such material. However, I prepare the pans as follows: Carefully line inside of each pan, rim-to-rim with HD Aluminum foil. Make about 1/2 dozen or so small (think ping-pong ball or smaller) aluminum balls, scatter them around the bottom of the pan to act as spacers. Then, add a 2nd layer of HD foil on top of the balls, making sure the top layer definitely sags to form a bowl within a bowl. Snug the top layer around the edges of the pan, put it into your smoker and get to cooking. As Rick Salmon would say, easy peasy. Good Q'en On Ya'. John
