I'd make a chimichurri sauce and a mayonnaise horseradish sauce. Don't forget a grilling sauce if you use one. The biggest issue is to be sure to pay close attention and slice the tri-tip thinly across the grain. You can also serve paper-thin slices of onions, caramalized onions (don't scortch them), pickled onions, cornichons or baby dills on the side. In fact, yOu might consider a relish platter and add lettuce, tomatoes, celery & carrot sticks, too.
