Probably doing a smallish one, 12-14 lbs., on my Stumps Backyarder. Will start out with a sage and onion compound butter to be rubbed both under and on skin, inject with chicken broth, stuff with onion celery, apple and oranges and cook at 250 - 280 to 160-165.
