Yo to all, I plan on cooking up some Canadian bacon ala reg's recipe which is linked below. I have cooked this before, but I cannot find my notes or the recipe I used. Reg's original post uses Prague powder and salt. I have used Tenderquick instead. My question is how much TQ should I use per gallon of water?
For some reason, I recall using 1.25 cups per gallon. Is that amount sound right?
