I always catch the drippings for gravy, but a few ideas:
1) Put some liquid in whatever you are catching the drippings in. I find that often if I don't the drippings will burn before enough liquid accumulates to keep it from happening. For turkey I just add some white wine before I put the turkeys on. I would put some in the gravy anyway, so why not. You can even just use water, it won't dilute the drippings to much (see below)
2) The drippings tend to get really concentrated. You will probably need to dilute them before making into gravy. TASTE IT!
3) I use a separator to get the grease out, just as I would if it wasn't on the smoker.
I make mine with lots of mushrooms and everyone seems to like it. At least they eat it and make noises like they are enjoying it.
