Juggy, I have notes from an event on curing a pork loin for Canadian bacon where this was taught. Hope I do not make a mistake here. Reg or Qfan will correct me I hope as it is their work and I plan to make some for holiday gifts. Hope it's ok to share as they have contributed here.
Total project weight 16 pounds
7.7 lb pork loin
1 gallon water to cover completely 8.3 pounds
3% TQ 7.68 ounces
2% sugar 5.12 ounces (recommend light or dark brown)
Not sure if I am helping here but I like the subject as I want to do this soon as well but have not done so.
