I agree with your time and temps. I cook turkeys in the smoker at 300 or more. Cook them hot and fast. When we cook them in the oven we cook them at 450 degrees. It's not like you have to cook turkeys low and slow to make the tender. I will brine two birds over night and cook one in the oven and one in the smoker. Hot fast and juicy is my aim.
