Well, it made me scratch my head as well. I didn't check the temperature of the brine until it had been setting there for about three hours. I used my Thermapen instant read thermometer which may be reading one or two degrees low. I was surprised when I found the brine was below freezing. The turkeys were thawed out and had been in my refrigerator for two days at 35 degrees. I was worried that the turkeys would re-freeze and that is why I brought it inside. Much to my surprise again it was still holding at 27 to 28 degrees inside. I don't understand all of this but, I think it has something to do with the high salt content of the brine. The turkeys were in no way frozen when removed from the brine.
