I have a wonderful citrus brine, with cut veggies,fresh herbs,pepper corns and cloves, B sugar and Kosher salt, all combined with veg.broth
I melt two lbs butter, soak a full size cheese cloth in it, and refrigerate till butter sticks to the cloth. lay cloth on counter (over a tin foil layer to protect counter from a huge mess) then wrap bird up like a baby, cook, and remove cloth last hr of cook... enjoy!
