Honestly, the cheap bone in ones come out the best to me. Why pay a premium to have someone else put a nice smoke on it and take the bones out for you. If you're going to do the doctoring up yourself, go cheap, cured, bone in ham, maple/pineapple glaze to finish, hickory is the king of wood for most pork, particularly hams and bacon!!
