i decided to show you my turkey too!
It is an unbrined turkey. I seasoned it under the skin and let brushed a mixture of the same seasoning and coconut oil all over the bird. I stuffed the cavity with a few rosemary sprigs..just because. I cooked it over hardwood lump with a cherry "Mojo brick" It cooked for 6 hours and was superb! The leftover bones and carcass made an excellent batch of turkey stock.
