Hi Mary Ann. I would not want to see you try to keep it to long but I think 7-10 days would be just fine. Having said that if you are using TQ that contains both nitrate and nitrite your shelf life increases substantually.

Juggy, Using the new system/formula will give you the most consistent results by far. Every batch of whatever you do should be exactly the same as the last. You can play a bit with the percentages of salt but I would not go less than 2.5 %

Stan, I have always had good luck vac pacing then freezing but I will pay closer attention on the next batch to see if there is much difference.
