Buy an oven thermometer or two. (They are inexpensive) Do a cook and check the internal temperatures on the oven gauges and compare those to your temperature gauge on the outside.
Hot air rises, so, like everyone said, your temperature gauges that are more than likely above your grates, will show hotter, then where your food is sitting.
Make adjustments based on the oven gauges.
