In the south it's tradition to eat Hoppin' John on New Year's Day. You can use a leftover ham bone instead of a ham hock.

Here's a basic recipe that I've made a few times. Good combination of flavors. Be sure to add some chopped greens in the end like collards or kale and cook until tender... I don't know why he left the greens out.
I add more ham and stock to make it soupier. Using dried peas over canned I think gives it a better taste and texture.
Ladle over rice with a couple shots of hot sauce and cornbread on the side and you've got a meal.
