Hi Chris, Time is the least of my worries... it's all about how well you know your cooking appliance, current wheather, and give yourself enough heat to reach your ultimate internal meat temp under desirable smoking conditions. I've won ribs in as little as 2 1/2 hrs, and as long as 5 hrs, if it snowing and blowing in the pit location... Just give yourself enough time to complete the winning result!
