Not done this stuff as much as you, but I always love when the weather presents challenges for our fellow competitors. Never won ribs in 2 and half hours, but we have in 7. We've been beat by 2.5 hour ribs for sure….one time this team put ribs on their pit at 5am, fired up the bbq guru, and went back to bed. Problem is they left the pit probe out, so it just ran and ran. 8am they learned they were toasted. They had two racks left, cooked them in less than 3 hours and beat us.
