Chris... again I'll say.... internal temp (by using tour meat thermonoture) is the most important. If Baby-Backs reach 200 degrees...take em off, and foil em, and stuff them in a blanket to keep them warm until it's time to submit them...THEY'RE DONE. 190 is too tough... and 210 is too mushy...It's not rocket science. Just be glad you captured them perfectly...weather it be 2 1/2 hrs. or 5
