I take the water pan out and cook at around 350 degrees. Place the roast in or over a pan and use the drippings for dipping. The only way to mess it up is over cooking it. I pull mine at 125. You can rub it with salt, pepper, and garlic and it will come out great. Or be more adventurous and make something like capt bills.
