Mary Ann I have been waiting to hear of your results. The pink colour is nothing and normal when your pieces touch one another.
When curing never use a finish rub that has salt in it, that will defeat the 3% formula.
Don't be nervous, if you follow the formula you will never have a problem. Now that you have done your first cured loin you can have a pile of fun working on other flavours, good luck
