Thanks Reg, I treated myself to an OXO kitchen scale a few months ago and now I see how nice that is to have available. I consider this project a big success even though I put too much (for me)finishing rub on. It looks great, the texture is perfect, and so is the flavor with the exception of where I overdid the rub. I used pickling spices for the aromatics and that worked well. Next time I want to try the maple syrup and a saltless rub. Anyway it is extremely delicious and I am proud and happy to deliver it as holiday gifts in spite of my mistakes. I will warn them:) Happy holidays to you. Mary Ann
