I'm making 2 boneless pork loins that are 2-3 pounds apiece on the Weber with lump and hickory. They are presently residing in a lite salt brine with maple, vanilla, bourbon, Aji Panka chili powder and some porketta seasoning in a couple vacuum pouches. Also will be burning some sausage/giblet pan dressing with wild rice, apples and dried cranberries and some buttermilk cluster buns. Warden Rosie will be firing up some Swedish meatballs and the daughters are making cheesy potatoes and desserts and other snacks and such. Food and spirits will be aplenty!!! Going down fur a nap after a long 6 nites at the hospital and then up and at it with a few cocktails and prep for tomorrow!
