Thanks for the link I actually read it a couple of times. There are a lot of concerns in cooking sous vide and I think a lot of people would be overwhelmed by all of this. People like me that are very careful with food handling should be less intimidated by this method of cooking. As an example I really do check my refrigerator often and try to keep it at 35 degrees. When I bring thins home from the market I sanitize everything before putting anything in the refrigerator or the cabinet. I also sanitize my kitchen counters every day and do all the other things everyone should do and more. All that being said, I think it is too much for me and I think I will pass on sous vide for now. Please continue to report your experience with this type of cooking as it still is very interesting to me.
