Trim off all exterior fat. Make rub out of brown sugar, garlic powder, black pepper, onion powder and whatever else you want. Wet tri tip so its moist. Put rub on ALL sides and let sit til rub looks like wet paste. Smoke at 250 to 275 for about an hour and a half until the center is 135 degrees. Remove, wrap in foil and rest 15 minutes. Slice in half WITH the grain, then slice each half thinly AGAINST the grain for med lengh slices. Pour juice from foil over slices. Prefer Hickory and or Pecan for smoke. Just did 300 pounds of Tri Tip for an event. Always comes out great. Enjoy.
