Yup - omelet...if ya pick the fridge over for leftovers, your guaranteed a different omelet every day, sometimes I top it with salsa.
The eggs...sometimes I like to put garlic powder and ground pepper right in the egg mix maybe along with some other herbs/spices such as sage, celery seed thyme etc (but I do stay away from salt as I heard it breaks down the egg making for a messy situation, but I don't know how true that is.
Sometimes I'll sautÚ too much stuff for the omelet (onions, peppers, mushrooms etc) so I simply put my extra sautÚd stuff in the fridge to use the next day.
