One of the first mentions on this forum about using the WSM without the water pan was by Dylan a long time ago. He mentioned that he did this with spatchcock (butterfly) chicken with very good results. So, I immediately had to try it and was very happy I did. He also mentioned that the WSM without the water pan yielded results similar to cooking on a BGE. The WSN cooks a lot hotter without the water pan and so the skin on chicken cooks dryer and more favorable in my opinion.
