I have been doing a lot of reading on this and I am about done asking questions. I think I will make the move on this towards the end of next month. I have to wait until then because I have some prior commitments and just can't stretch myself any more at this time. Learning a new cooking system is going to take some time and time is the one thing I don't have any more of right time. Thanks for your help understanding all of this.
