I have used the WSM in several ways.
1. As a smoker with water in the pan.
2. As a smoker with no water. (This is my preferred method now, just need to keep the drippings from burning)
3. You can have it fully intact and use it as a "Grill" by removing the water pan. I have cooked sausages and ABTs on both levels, no pan, and had great success. (It can get upwards of 400+degrees this way.
2. If you need very hot, the middle portion can be removed and the top crate can carefully fit right on top of the bottom portion, this allows for almost a smokey joe experience. Salmon and I have had to do this in the past.... (Hey Salmon, great memories there....)
