One of my favorite breakfasts that we make is what I call bbq gravy. Basically a roux made with bacon grease then milk to thicken to desired thickness for gravy. Salt, a generous amount of black pepper and a little cayenne added. Toss in a good amount of chopped/pulled bbq and let it heat through. Sometimes I will saute a little onion with the bacon grease before adding the flour. Put this over top cathead biscuits and a side of scrambled eggs and sliced tomatoes. Another favorite is taking hot smoked salmon and making eggs benedict or taking the salmon and adding it to scrambled eggs with green onions and putting it between two buttermilk waffles for a breakfast waffle sandwich. Sometimes I'll add a little cheese sauce over the eggs. Summer months I really enjoy a fresh fruit salad and a cup of coffee with a toasted English muffin with a little peanut butter on it. Most mornings it's just a few cups of coffee. Lately I've been eating steak and eggs about once a week. Btw, my cholesterol levels are better than my vegan uncles. He can't believe it and I show him the test results and enjoy my meats:)
