If you were to cool right away in a room temp bath of your choice (match your rib flavour) the ribs will hold on to a lot of moisture. Vac pac right after that and you should be good to hold or freeze. From the freezer to the plate in about 12 minutes in boiling water but again finish is your choice, sauce and sally worked out fine for me
