I'm hoping the next big thing will be a nostalgia craze. BBQ used to be an all American cuisine. Taking a piece of difficult to cook meat, working flavor and time/temperature techniques together to make something truly amazing. Farm to table and traditional pure blood lines in our livestock will be very popular very soon.
