Nobody said it would make it "better". It is a techinique that could be used for turning sauces into powders, thickened and dropped into a solution that gives the appearance like caviar (just a couple examples. It is fun! there are many ways you can turn ordinary foods into something to look completely different than what they are, but when consummed they taste as though nothing has changed about them. In summary, a fun way to present things in a different way.
