Neatly trimmed St Louis style ribs greatly outnumber bb's in competition entries these days. I think it is because it is much easier to get them uniform in appearance. Also, you can control the size of the bite area while creating 6 "clones".

Babybacks often have a sharp bone near the top that's hard to trim down.

Go with the flow. If you can make a babyback as uniform as a spare you'll do well. But, it will be harder.
