I made some pastrami last week, using a store bought corned beef flat.
-Soaked in water for 24 hours- changing the water every 2 hours
-Made a simple rub of-
4 tablespoons fresh coarsely ground black pepper
2 tablespoons coriander powder
1 teaspoon mustard powder
1 tablespoon brown sugar
1 tablespoon paprika
2 teaspoons garlic powder
2 teaspoons onion powder
-cooked at 275 (would have liked lower temp for this, but in the middle of other cook until 165 internal
-wrapped and rested for two hours in cooler
The result was very good.
