Ray, if I've learned one single thing about beef jerky making I'll add it right here. DO NOT OVER SMOKE!!! Under smoking or none at all and done in a dehydrator would be better. LITERALLY 30 minutes of smoke is plenty on those thin strips of meat or it will taste like burnt oil and you'll be trying to find a place to politely spit it out. Just a hint of smoke and get that heat, sweet, spice just right and I can blow a gut on it!! Truly, smoke should stand equal to the other flavors, NOT kick the crap out of them, good advice for ANY smoking/BBQ. Now I'll have to get some jerky going too ;-)
