Thanks Ray, I've done this a few times now and with spritzing of just a bit of water while applying the rub and gelitan in a few layers has really made a difference in the finished crust/bark of the ribs, along with the spraying of juice concocion of choice while smoking. I let the rub set up on the ribs overnite and when transferring to the smoker I try to be careful not to rub off the coating. 3 times in a row they have come out like clones of each other evry time. Will see how this goes thru the summer but so far, some of the best ribs I've done and the repeatabilty has me very happy.
