We will be doing an upcoming festival event to raise money for a local charity. We are looking at BBQ/Appetizer items to cook and vend, that would yield a decent profit. We will already be doing pulled pork. We were wondering if anyone could suggest any proven food items that we should do? We will have access to 3 large smokers and 4 deep fryers.

Secondly, in order to keep efficient, is there a suggested food item that we could cook the night before and vend the next day? If so, what would be the best way to hold it and to re-heat it?
