Bbq nachos are easy and cost effective. Should be able to find a rental place that has cheese dispensers. Sam's carries the paper trays, jalapenos and cans of cheese. Of course if you shop restaurant depot you can find everything there too. Use a hotel pan with a metal rack in bottom to keep cooked chips of bottom. You'll have something people can carry and eat as they walk around. Put fair amount of chips in container sprinkle couple ounces of that pork you have (don't need much), top with cheese sauce and a few peppers then squirt a little bbq sauce over them. Using same paper containers you could serve bbq (Bobby Q) sundaes. Put a little pork down top with doctored up canned baked beans that you heat in smoker and top that with a scoop of store bought slaw and a decorative squirt of bbq sauce. Use portion control ice cream scoops. Remember to have forks and napkins available. If you can find them i think Allens brand beans are pretty darn good right from the can. Easier than trying to doctor something up:)
