Here is the recipe for the wings, and for the blue cheese dressing I made to go with them. Omit the sugar and the pimentoes from the dressing - you won't miss them.

Parmesan Chicken Wings, P. Kirk's

2 lbs chicken wings
1/2 cup grated Parmesan cheese
1 T dried parsley
1/2 T dried oregano
1 t salt
1/4 t pepper
1/4 cup butter

Melt butter, dip wings into the butter, then roll in the mixed up stuff . Line a jellyroll pan with a double layer of foil (or even better, use Heavy Duty foil), spray with Pam, and bake at 350 for 1 hour.

Serve with blue cheese dressing and celery, if desired.

Zesty Blue Cheese Dressing

2 ounces blue cheese (about 1/4 cup, crumbled)
1 cup Hellman's mayo
1/4 cup sour cream
2 T cider vinegar
1 T sugar
1/2 clove garlic, minced
pinch salt
3 T chopped pimento, optional

Beat ingredients until fluffy.
