An excellent choice New2Q. Who needs a finicky brisket? This link should get you started. I've never injected my chuck rolls; it's so juicy and does not need any added moisture. Season with salt, pepper and cayenne. A very forgiving cut; my pit runs at 275° for this. You'll enjoy it.
