They make a vacuum bag that allows moisture to escape but nothing to enter after it is sealed.
I've not used them (my vacuum machine won't work with their bags)but from what I've read they do a great job of dry aging at home.
Know you're already in day three of the video technique, you might check these bags out for your next try.
