Don, thanks for the link to what I found to be a very interesting product. I don't think I have enough room to store a big piece of meat for 21 days or so. I am interested is doing some dry aging experiments as the one day deal was enough to taste the difference. In the one day trial I did not cover the steaks with anything. I was not worried about doing that as I keep a very cold and clean refrigerator. It's clean almost to the excessive compulsive stage.
The next time I will try the five day deal wrapped in very clean cheese cloth. If that works as well as I think it will, then maybe I will go to the UMAI bags. But at this time it seems a bit too much as we would probably hardly ever do more than a couple of steaks at a time. The UMAI bags looks like it is geared to aging to the point of having to clean off about 9% of the black stuff off from 20 + days of aging from $$$ chunk of meat.
