Well gang, the steak was wonderful. I followed the instructions in the video and it all worked perfectly. Four days wrapped in chef grade cheese cloth at 36 degrees. I seasoned with sea salt and ground pepper just before cooking on my infra red steak grill. Pulled it at 130 internal and let it rest for 5 minutes.
I took pictures with my phone and they are not very good at all. I will certainly do this again and will use a real camera to record the results!
Also, you can re-use the cheese cloth by simply washing it with dish detergent and rinsing thoroughly.
